Taro in Coconut Milk

I was shocked the first time I have encountered and tasted this recipe. I never thought that the leaves and stems of taro can also be eaten and it really tasted good. Before, I only eat taro root crops but now, I am craving for its leaves and stem together with some rice. Try this recipe.

In a casserole, heat 3 tablespoons of oil and sauté 5 cloves of minced garlic, 2 tablespoons of minced ginger and 2 medium sized chopped red onions then add ½ kilo of diced pork. Mix in 25 pieces of dried and shredded taro leaves. Pour in 2 cups of coconut milk and bring to a boil then simmer for 15 minutes. Add a cup of coconut cream, 5 pieces of sliced jalapeno, ¼ cup of shrimp paste, some salt and simmer until oil comes out of the cream. Serve hot with plain white rice.

You may also try its vegan recipe by not adding pork and replace shrimp paste with salt.
